Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 ripe avocado, diced
  • 1 tablespoon fresh lime juice
  • 1 head of butter or romaine lettuce, leaves separated
  • Fresh cilantro for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine the drained chickpeas, olive oil, smoked paprika, ground cumin, garlic powder, onion powder, salt, and pepper. Toss until the chickpeas are well-coated.
  3. Spread the seasoned chickpeas on a baking sheet and roast in the oven for 20-25 minutes, or until crispy.
  4. While the chickpeas are roasting, prepare the avocado. In a small bowl, mash the diced avocado and mix in the lime juice, salt, and pepper.
  5. Once the chickpeas are done, remove them from the oven and let them cool slightly.
  6. Assemble the wraps by placing a spoonful of the avocado mixture in the center of each lettuce leaf, followed by a generous spoonful of roasted chickpeas.
  7. Garnish each wrap with fresh cilantro and serve immediately.
