Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 1 can coconut milk
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 medium tomato, diced
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish
  • Cooked basmati rice for serving

Instructions:

  1. Heat vegetable oil in a large pan over medium heat.
  2. Add cumin seeds and sauté until they begin to crackle.
  3. Add chopped onion and cook until translucent.
  4. Stir in minced garlic and grated ginger, cooking for 1-2 minutes until fragrant.
  5. Add curry powder, turmeric, and garam masala, stirring well to combine.
  6. Add the diced tomato and cook until softened.
  7. Pour in the coconut milk and bring to a gentle simmer.
  8. Add the chickpeas and season with salt. Simmer for 10-15 minutes to allow flavors to meld.
  9. Garnish with fresh cilantro and serve with cooked basmati rice.
