Spiced Dal with Caramelized Onions and Cardamom

Ingredients:

  • 1 cup red lentils (dal)
  • 1 large onion, thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 teaspoon black pepper, freshly ground
  • 2-3 whole cloves
  • 2-3 green cardamom pods, slightly crushed
  • 4 cups water
  • Salt to taste
  • Fresh cilantro for garnish

Instructions:

  1. Rinse the lentils under cold water until the water runs clear. In a large pot, combine the rinsed lentils and water. Bring to a boil, then reduce the heat to low and simmer for about 20 minutes, or until the lentils are tender.
  2. While the lentils are cooking, heat the butter and olive oil in a pan over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring frequently, until the onions are golden brown and caramelized, about 15-20 minutes.
  3. Once the lentils are cooked, add the black pepper, cloves, and crushed cardamom pods to the pot. Stir well and let it simmer for another 5 minutes to allow the flavors to meld. Adjust salt to taste.
  4. Remove the cloves and cardamom pods before serving. Serve the dal hot, topped with the caramelized onions and garnished with fresh cilantro.
