Ingredients:

  • 1 cup dried plums (prunes), chopped
  • 1 cup breadcrumbs
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 cup milk
  • Zest of 1 orange
  • 1/2 cup mixed dried fruits (raisins, currants, etc.)
  • 1/4 cup chopped nuts (optional)

Instructions:

  1. Grease a pudding basin or a heatproof bowl and set aside.
  2. In a mixing bowl, cream the softened butter and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, combine the breadcrumbs, flour, baking powder, cinnamon, nutmeg, ginger, and salt.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
  6. Fold in the chopped dried plums, mixed dried fruits, orange zest, and nuts if using.
  7. Pour the mixture into the prepared pudding basin and smooth the top.
  8. Cover the basin with a piece of parchment paper and then with aluminum foil, securing it tightly.
  9. Place the pudding in a large pot with boiling water, ensuring the water comes halfway up the sides of the basin.
  10. Steam for about 2-3 hours, checking the water level and refilling as necessary.
  11. Once done, remove the pudding from the pot and let it cool slightly before unmolding.
  12. Serve warm with a drizzle of cream or a scoop of vanilla ice cream.
