Ingredients:

  • 4 medium potatoes, peeled and diced
  • 3 medium tomatoes, chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green chilies, slit
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons vegetable oil
  • Fresh coriander leaves for garnish
  • 1 cup water

Instructions:

  1. Heat the vegetable oil in a pan over medium heat. Add cumin seeds and mustard seeds, and let them splutter.
  2. Add the chopped onions and sauté until translucent.
  3. Stir in the minced garlic, grated ginger, and green chilies. Cook for an additional minute until fragrant.
  4. Add the diced potatoes and sauté for 5 minutes, stirring occasionally.
  5. Incorporate the chopped tomatoes, turmeric powder, red chili powder, and salt. Mix well and cook until the tomatoes soften.
  6. Pour in 1 cup of water, cover the pan, and let it simmer for about 15-20 minutes or until the potatoes are tender.
  7. Once cooked, sprinkle garam masala over the curry and stir well.
  8. Garnish with fresh coriander leaves before serving.
