Ingredients:

  • 1 cup fresh or frozen cherries, pitted
  • 1/2 cup spiced rum
  • 1/2 cup sugar
  • 2 cups milk
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1 tablespoon lemon juice

Instructions:

  1. In a medium saucepan, combine the cherries, spiced rum, and 1/4 cup of the sugar. Cook over medium heat until the cherries soften and release their juices, about 5-7 minutes. Remove from heat and set aside.
  2. In another saucepan, whisk together the milk, cornstarch, remaining sugar, salt, cinnamon, nutmeg, and allspice. Cook over medium heat, stirring constantly until the mixture thickens and begins to bubble, about 10-15 minutes.
  3. Remove from heat and stir in the vanilla extract and butter until melted and smooth.
  4. Fold the cherry mixture into the pudding until well combined. Add the lemon juice and mix gently.
  5. Pour the pudding into serving dishes and chill in the refrigerator for at least 2 hours before serving.
  6. Serve chilled, garnished with additional cherries and a sprinkle of cinnamon if desired.
