Ingredients:

  • 4 medium potatoes, peeled and diced
  • 2 large onions, chopped
  • 3 medium tomatoes, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the cumin seeds and sauté until fragrant, about 1 minute.
  2. Add the chopped onions and garlic, cooking until the onions are translucent, about 5-7 minutes.
  3. Stir in the diced tomatoes and cook for another 5 minutes, allowing the tomatoes to soften.
  4. Add the diced potatoes, coriander powder, turmeric, paprika, and season with salt and pepper. Stir well to combine.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 25-30 minutes, or until the potatoes are tender.
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro.
