Ingredients:

  • 2 cups cooked chicken, shredded
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 ripe avocado, diced
  • 1/2 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 4 large flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese (optional)
  • Sour cream for serving (optional)

Instructions:

  1. In a bowl, combine the shredded chicken, olive oil, chili powder, cumin, smoked paprika, salt, and pepper. Mix well until the chicken is evenly coated.
  2. Heat a skillet over medium heat and add the chicken mixture. Cook for about 5-7 minutes until heated through.
  3. In another bowl, combine the diced avocado, chopped cilantro, and lime juice. Gently mix to combine and season with a pinch of salt.
  4. Warm the tortillas in a dry skillet or microwave until soft.
  5. To assemble the burritos, place a portion of the chicken mixture in the center of each tortilla, followed by a layer of shredded lettuce, diced tomatoes, avocado mixture, and cheese if using.
  6. Fold the sides of the tortilla over the filling, then roll from the bottom to create a burrito. Repeat with the remaining tortillas.
  7. Serve with sour cream on the side if desired.
