Ingredients:

  • 1 lb boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup shredded cabbage
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1 avocado
  • 1/2 cup Greek yogurt (or dairy-free yogurt)
  • 1 tablespoon lime juice (for crema)
  • Salt to taste

Instructions:

  1. In a bowl, combine olive oil, lime juice, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Add the chicken thighs, ensuring they are well coated. Marinate for at least 30 minutes.
