Ingredients:

  • 2 cups all-purpose flour
  • 3/4 cup boiling water
  • 1/2 cup scallions, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1/4 cup vegetable oil (for frying)
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1 teaspoon sesame seeds

Instructions:

  1. In a mixing bowl, combine the flour and salt. Gradually add the boiling water, stirring with a fork until the dough comes together.
  2. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
  3. Divide the dough into four equal pieces. Roll each piece into a thin circle (about 8 inches in diameter).
  4. Brush a thin layer of sesame oil on each circle, then sprinkle with chopped scallions and white pepper.
  5. Roll the dough into a log, then coil it into a spiral shape. Flatten the spiral gently with your palm, then roll out again into a circle.
  6. Heat vegetable oil in a skillet over medium heat. Fry each pancake for 2-3 minutes on each side until golden and crispy.
  7. For the dipping sauce, mix sesame oil, soy sauce, rice vinegar, sugar, and sesame seeds in a small bowl.
  8. Serve the pancakes hot with the dipping sauce on the side.
