Ingredients:

  • 1 lb boneless, skinless chicken thighs
  • 2 tablespoons chipotle in adobo sauce, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 8 small corn tortillas
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • Juice of 1 lime
  • Fresh cilantro, chopped
  • Avocado slices (optional)
  • Lime wedges (for serving)

  4. Warm the corn tortillas in a dry skillet for about 30 seconds on each side until pliable.
