Ingredients:

  • 1 cup rice
  • 2 cups chicken or vegetable broth
  • 1 pound spicy Italian sausage, casings removed
  • 4 slices bacon, chopped
  • 1 bell pepper, diced (any color)
  • 1 cup mushrooms, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add the chopped bacon and cook until crispy. Remove the bacon and set aside, leaving the rendered fat in the skillet.
  2. In the same skillet, add the spicy Italian sausage. Cook until browned and cooked through, breaking it up with a spoon as it cooks.
  3. Add the diced onion, bell pepper, and mushrooms to the skillet. Sauté until the vegetables are softened, about 5-7 minutes.
  4. Stir in the minced garlic, Italian seasoning, and crushed red pepper flakes. Cook for an additional minute until fragrant.
  5. Add the rice to the skillet and stir to combine with the sausage and vegetables.
  6. Pour in the chicken or vegetable broth, and bring to a boil. Reduce heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  7. Remove from heat, fluff the rice with a fork, and stir in the reserved bacon. Season with salt and pepper to taste.
  8. Garnish with fresh chopped parsley before serving.
