Ingredients:

  • 1 cup semolina (soji)
  • 4 cups water or milk (or a combination)
  • 1 cup sugar
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon salt
  • 1/2 teaspoon chili powder (adjust to taste)
  • 1 tablespoon butter or ghee
  • Chopped nuts for garnish (optional)
  • Fresh mint leaves for garnish (optional)

Instructions:

  1. In a saucepan, bring the water or milk to a boil. Add the salt and sugar, stirring until dissolved.
  2. Gradually whisk in the semolina, reducing the heat to low. Stir continuously to prevent lumps from forming.
  3. Cook the mixture for about 5-7 minutes until it thickens and starts to pull away from the sides of the pan.
  4. Remove from heat and stir in the butter or ghee, lemon juice, lemon zest, and chili powder until well combined.
  5. Pour the mixture into a greased dish and let it set for about 30 minutes at room temperature.
