  • 2 cups vegetable broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 ripe mango, diced
  • 1 jalapeño, seeded and minced
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions:

  3. Once the quinoa is cooked, fluff it with a fork and stir in the black beans along with the remaining olive oil, adding salt and pepper to taste.
  4. To assemble the bowls, divide the quinoa and black bean mixture among serving dishes. Top with a generous scoop of spicy mango salsa, sliced avocado, and fresh cilantro.
  5. Serve immediately and enjoy this refreshing and nutritious bowl!
