Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh basil pesto
  • 1 teaspoon red pepper flakes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 teaspoon garlic powder
  • 1 tablespoon balsamic vinegar

Instructions:

  1. In a bowl, mix the basil pesto with red pepper flakes and olive oil. Season with salt and pepper.
  2. Add the chicken breasts to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat the grill to medium-high heat. While the grill is heating, toss the cherry tomatoes, bell pepper, and zucchini with garlic powder, balsamic vinegar, salt, and pepper.
  4. Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked through and internal temperature reaches 165°F (75°C).
  5. In the last few minutes of cooking, add the vegetables to the grill and cook until tender and slightly charred.
  6. Serve the grilled chicken topped with additional pesto if desired, alongside the roasted vegetables.
