Ingredients:

  • 1 pound shrimp, peeled and deveined
  • 1 pound Brussels sprouts, halved
  • 2 tablespoons harissa paste
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup plain yogurt
  • 1/2 cup feta cheese, crumbled
  • 1 tablespoon maple syrup
  • 1 tablespoon lemon juice
  • Chopped parsley for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. On a baking sheet, toss the halved Brussels sprouts with olive oil, salt, and pepper. Roast in the oven for about 20-25 minutes, or until golden and crispy.
  3. In a bowl, combine the shrimp with harissa paste, salt, and pepper. Heat a skillet over medium-high heat and sauté the shrimp for 3-4 minutes, or until cooked through and slightly charred.
  4. In another bowl, mix the yogurt, crumbled feta, maple syrup, and lemon juice until well combined. Adjust seasoning to taste.
  5. Serve the sautéed shrimp over the roasted Brussels sprouts, drizzled with the yogurt feta sauce and topped with chopped parsley.
