Ingredients:

  • 12 large eggs
  • 1 cup cooked steak, diced
  • 1 cup shredded cheese (cheddar or pepper jack)
  • 1 bell pepper, diced (red or green)
  • 1 onion, diced
  • 1-2 jalapeño peppers, diced (adjust for spice preference)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing until they are soft and fragrant, about 5-7 minutes.
  3. Add the diced jalapeño and cooked steak to the skillet, cooking for another 2-3 minutes until heated through.
  4. In a large bowl, whisk together the eggs, salt, and pepper until well combined. Pour the egg mixture over the steak and vegetable mixture in the skillet.
  5. Sprinkle the shredded cheese evenly over the top.
  6. Cook on the stovetop for 3-4 minutes, until the edges begin to set. Then transfer the skillet to the preheated oven.
  7. Bake for 15-20 minutes, or until the frittata is fully set and the top is lightly golden.
