Ingredients:

  • 6 large eggs
  • 1 cup shredded cheese (cheddar or pepper jack)
  • 1 cup diced bell peppers (red, yellow, and green)
  • 1/2 cup diced onions
  • 1 cup cooked steak, diced
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh cilantro or parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs, chili powder, paprika, salt, and pepper until well combined.
  3. In an oven-safe skillet, heat olive oil over medium heat. Add the diced onions and bell peppers, sautéing until they are soft and slightly caramelized, about 5-7 minutes.
  4. Add the diced steak to the skillet and stir to combine, cooking for an additional 2-3 minutes until warmed through.
  5. Pour the egg mixture evenly over the vegetables and steak in the skillet. Gently stir to distribute the ingredients.
