Ingredients:

  • 1 cup raw rice
  • 2 medium onions, finely chopped
  • 2 medium tomatoes, chopped
  • 2 green chilies, slit
  • 3 cups water
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • Salt to taste
  • Fresh coriander for garnish

Instructions:

  1. Rinse the raw rice under cold water until the water runs clear. Drain and set aside.
  2. In a large pot, heat the oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
  3. Add the chopped onions and sauté until they are translucent and slightly golden.
  4. Stir in the chopped tomatoes and green chilies. Cook until the tomatoes are soft and the mixture is well combined.
  5. Add the turmeric powder and salt, mixing well to incorporate the spices.
  6. Add the drained rice, stirring gently to coat the rice with the tomato-onion mixture.
  7. Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes, or until the rice is cooked and the water is absorbed.
  8. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
  9. Garnish with fresh coriander and serve hot.
