Ingredients:

  • 1 pie crust (store-bought or homemade)
  • 4 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup bacon bits, cooked
  • 1 cup heavy cream
  • 1/2 onion, finely chopped
  • 1 cup mushrooms, sliced
  • 1/2 cup feta cheese, crumbled
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. If using a homemade pie crust, roll it out and fit it into a 9-inch pie dish. Prick the bottom with a fork and pre-bake for 10 minutes. If using store-bought, follow package instructions for pre-baking.
  3. In a skillet, heat olive oil over medium heat. Sauté the onions until translucent, about 3-4 minutes.
  4. Add the sliced mushrooms to the skillet and cook until softened, about 5 minutes. Stir in the chopped spinach and cook until wilted. Remove from heat and let cool slightly.
  5. In a mixing bowl, whisk together the eggs, heavy cream, salt, and pepper.
  6. Stir in the sautéed vegetables, cooked bacon bits, and crumbled feta cheese into the egg mixture.
  7. Pour the filling into the pre-baked pie crust, spreading it evenly.
  8. Bake for 30-35 minutes, or until the quiche is set and lightly golden on top.
  9. Allow to cool for a few minutes before slicing and serving.
