Ingredients:

  • 1 cup split peas, rinsed
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 cups fresh spinach, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice (optional, for brightness)

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until softened.
  2. Add the minced garlic and smoked paprika. Stir for about 1 minute until fragrant.
  3. Add the rinsed split peas, vegetable broth, bay leaf, thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for about 30-40 minutes, or until the peas are tender.
  5. Remove the bay leaf and stir in the chopped spinach. Cook for an additional 5 minutes until the spinach is wilted.
  6. For added brightness, stir in lemon juice before serving. Adjust seasoning as needed.
