Ingredients:

  • 2 ribeye steaks (about 6 oz each)
  • 4 large eggs
  • 4 tablespoons unsalted butter, softened
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions:

  1. In a small bowl, mix the softened butter with parsley, chives, garlic powder, and a pinch of salt. Set aside.
  2. Season the steaks generously with salt and pepper on both sides.
  3. Heat a skillet over medium-high heat and add a drizzle of olive oil.
  4. Once the oil is shimmering, add the steaks to the pan. Cook for about 4-5 minutes on each side for medium-rare, or to your desired doneness.
  5. While the steaks are cooking, in a separate non-stick skillet, heat a little butter over medium heat and crack the eggs into the pan. Cook until the whites are set but the yolks are still runny, about 3-4 minutes.
