Ingredients:

  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup cocoa powder
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh strawberries, hulled and chopped
  • 1/4 cup dark chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a square baking dish with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, almond flour, cocoa powder, baking powder, and salt.
  3. In a separate bowl, whisk together the honey (or maple syrup), melted coconut oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the chopped strawberries and dark chocolate chips until evenly distributed.
  6. Spread the mixture evenly into the prepared baking dish and press down firmly.
  7. Bake for 20-25 minutes, or until the edges are firm and the center is set.
  8. Allow to cool in the pan for 10 minutes, then lift out using the parchment paper and let cool completely on a wire rack.
  9. Once cooled, cut into bars and enjoy!
