Ingredients:

  • 2 medium snake gourds
  • 1 cup red lentils, washed
  • 1/2 cup grated coconut
  • 1 onion, finely chopped
  • 2 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut the snake gourds in half lengthwise and scoop out the seeds to create boats.
  3. In a pan, heat oil over medium heat and add mustard seeds. Once they start to splutter, add cumin seeds, chopped onion, ginger-garlic paste, and green chilies. Sauté until onions are translucent.
  4. Add the washed red lentils, turmeric powder, and salt. Pour in 2 cups of water and cook until the lentils are soft and most of the water is absorbed.
  5. Stir in the grated coconut and garam masala. Mix well and adjust seasoning if needed.
  6. Stuff the lentil mixture into the prepared snake gourd halves.
  7. Place the stuffed gourds on a baking tray and bake for about 20-25 minutes, or until the snake gourd is tender.
  8. Remove from the oven, garnish with fresh coriander leaves, and serve warm.
