Ingredients:

  • 8 medium-sized squid, cleaned and tentacles removed
  • 1 cup gluten-free breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon red pepper flakes
  • 1 egg, beaten
  • Salt and pepper to taste
  • 1/4 cup olive oil for frying
  • Lemon wedges for serving

Instructions:

  1. In a bowl, combine gluten-free breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, red pepper flakes, beaten egg, salt, and pepper. Mix until well combined.
  2. Stuff each cleaned squid with the breadcrumb mixture, making sure not to overfill. Secure the open ends with toothpicks.
  3. Heat olive oil in a frying pan over medium heat. Once hot, carefully add the stuffed squid.
  4. Fry the squid for about 2-3 minutes on each side, or until golden brown and cooked through.
  5. Remove the squid from the pan and drain on paper towels.
  6. Serve immediately with lemon wedges on the side.
