Ingredients:

  • 1 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup melted coconut oil
  • 1/4 cup erythritol or your favorite sugar substitute
  • 1/2 teaspoon vanilla extract
  • 1 package (8 oz) cream cheese, softened
  • 1 cup Greek yogurt (plain, unsweetened)
  • 1/2 cup unsweetened almond milk
  • 1/2 cup sugar-free chocolate pudding mix
  • 1 cup whipped cream (sugar-free)
  • Shaved dark chocolate (for garnish)
  • Fresh berries (for garnish)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, cocoa powder, melted coconut oil, erythritol, and vanilla extract. Mix until well combined.
  3. Press the mixture into the bottom of a 9x13 inch baking dish to form the crust. Bake for 10-12 minutes, then allow to cool.
  4. In another bowl, beat the softened cream cheese until smooth. Add the Greek yogurt, almond milk, and sugar-free chocolate pudding mix. Mix until well combined and creamy.
  5. Spread the cream cheese mixture over the cooled crust evenly.
