  • 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
  • 1 cup coconut milk (full-fat for creaminess)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened applesauce
  • 1 pre-made whole grain pie crust (or gluten-free if desired)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch (optional, for thickening)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the mashed sweet potatoes, coconut milk, eggs, and vanilla extract. Mix until smooth.
