Ingredients:

  • 2 cups almond flour
  • 1/2 cup unsweetened applesauce
  • 1/2 cup erythritol or your preferred sugar substitute
  • 1/2 cup unsweetened vanilla almond milk
  • 1/4 cup coconut oil, melted
  • 4 large egg whites
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 cup sugar-free vanilla icing

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, combine almond flour, erythritol, baking powder, and salt.
  3. In another bowl, whisk together the applesauce, almond milk, melted coconut oil, egg whites, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. Once cooled, spread the sugar-free vanilla icing between the layers and on top of the cake.
