Ingredients:

  • 4 cups watermelon rind, peeled and cut into 1-inch pieces
  • 2 cups sugar
  • 1 cup white vinegar
  • 1 cup water
  • 1 teaspoon salt
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon allspice berries
  • 1 teaspoon mustard seeds
  • 1 teaspoon red pepper flakes
  • 1 cinnamon stick

Instructions:

  1. Begin by preparing the watermelon rinds. Remove the green outer skin and cut the rinds into 1-inch pieces.
  2. In a large pot, combine the sugar, vinegar, water, and salt. Stir over medium heat until the sugar dissolves.
  3. Add the ginger, allspice, mustard seeds, red pepper flakes, and cinnamon stick to the pot. Bring the mixture to a boil.
  4. Once boiling, add the watermelon rinds to the pot. Reduce the heat and simmer for about 10 minutes until the rinds are slightly tender.
  5. Remove the pot from heat and let the mixture cool to room temperature.
  6. Transfer the pickles and brine into sterilized jars. Seal tightly and refrigerate for at least 24 hours before serving for the best flavor.
