Ingredients:

  • 2 cups finely shredded cabbage
  • 2 cups fresh spinach, chopped
  • 1 cup grated carrot
  • 1/4 cup Szechuan sauce
  • 4 slices of white bread
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the shredded cabbage, chopped spinach, grated carrot, and Szechuan sauce. Mix well until all the vegetables are coated.
  3. In a skillet, heat olive oil over medium heat. Add garlic powder and onion powder, cooking for about 1 minute until fragrant.
  4. Add the vegetable mixture to the skillet and sauté for 5-7 minutes until the cabbage and spinach are tender. Season with salt and pepper to taste.
  5. While the vegetables are cooking, place the slices of white bread on a baking sheet and toast in the oven for about 5-7 minutes until golden brown.

  7. Return the topped toasts to the oven for an additional 5 minutes to warm through.
  8. Serve immediately with lemon wedges on the side for a fresh squeeze of lemon juice.
