Ingredients:

  • 4 large bell peppers (any color)
  • 2 cups leftover taco meat
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)
  • Sour cream for serving (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a mixing bowl, combine the leftover taco meat, black beans, corn, cumin, chili powder, salt, and pepper.
  4. Stuff each bell pepper with the taco meat mixture, pressing down gently to pack it in.
  5. Place the stuffed peppers upright in a baking dish and cover with aluminum foil.
  6. Bake in the preheated oven for 25 minutes.
  7. Remove the foil, sprinkle shredded cheese on top of each pepper, and bake uncovered for an additional 10 minutes, or until the cheese is melted and bubbly.
  8. Garnish with fresh cilantro if desired, and serve with sour cream on the side.
