Ingredients:

  • 1 lb pork tenderloin
  • 1/4 cup teriyaki sauce
  • 1 tablespoon fresh ginger, grated
  • 2 large carrots, cut into sticks
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, thinly sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)
  • Fresh cilantro for garnish (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix the teriyaki sauce and grated ginger. Marinate the pork tenderloin in this mixture for at least 30 minutes.
  3. While the pork is marinating, prepare the vegetables. In a large bowl, toss the carrots, bell peppers, and cherry tomatoes with olive oil, salt, and pepper.
  4. Spread the vegetables on a baking sheet and roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized.
  5. While the vegetables are roasting, heat a skillet over medium-high heat. Remove the pork from the marinade and sear it in the skillet for 2-3 minutes on each side until browned.
  6. Transfer the seared pork to the oven and roast for an additional 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
  7. Let the pork rest for 5 minutes before slicing.
  8. Serve the sliced pork tenderloin alongside the roasted vegetables and fresh cucumber slices. Garnish with sesame seeds and cilantro if desired.
