Ingredients:

  • 4 chicken thighs, boneless and skinless
  • 1/4 cup teriyaki sauce
  • 2 medium zucchinis, sliced
  • 2 medium summer squashes, sliced
  • 1 medium onion, sliced into rings
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Sesame seeds for garnish
  • Green onions, chopped for garnish

Instructions:

  1. In a bowl, combine chicken thighs and teriyaki sauce. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  2. Preheat the grill to medium-high heat.
  3. In a separate bowl, toss zucchini, summer squash, and onion rings with olive oil, salt, and pepper.
  4. Grill the marinated chicken thighs for about 6-7 minutes per side, or until they reach an internal temperature of 165°F (75°C).
  5. During the last 5 minutes of grilling, add the vegetables to the grill and cook until tender and slightly charred, about 3-4 minutes.
  6. Remove chicken and vegetables from the grill. Let the chicken rest for a few minutes before slicing.
  7. Serve the sliced chicken thighs alongside the grilled zucchini and summer squash. Garnish with sesame seeds and chopped green onions.
