Ingredients:

  • 1 lb chicken breast, thinly sliced
  • 1 tablespoon soy sauce
  • 2 tablespoons fish sauce
  • 1 tablespoon oyster sauce
  • 2 cloves garlic, minced
  • 1 tablespoon brown sugar
  • 1 cup fresh Thai basil leaves, roughly chopped
  • 8 small corn tortillas
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • Juice of 1 lime
  • Salt, to taste
  • Fresh cilantro, for garnish

Instructions:

  1. In a bowl, mix soy sauce, fish sauce, oyster sauce, minced garlic, and brown sugar. Add the sliced chicken and marinate for at least 30 minutes.
  2. Heat a large skillet over medium-high heat. Add the marinated chicken and cook until fully cooked and caramelized, about 5-7 minutes. Stir in chopped Thai basil and cook for an additional minute.
  3. While the chicken cooks, prepare the mango salsa by combining diced mango, red onion, jalapeño, lime juice, and salt in a bowl. Toss well to combine.
  4. Warm the corn tortillas in a dry skillet or microwave until pliable.
  5. Assemble the tacos by placing a generous amount of the Thai basil chicken on each tortilla. Top with a spoonful of mango salsa and garnish with fresh cilantro.
