Ingredients:

  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1 cup vegetable broth
  • 1 stalk lemongrass, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/4 teaspoon black pepper

Instructions:

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, vegetable broth, chopped lemongrass, salt, sugar, and black pepper.
  3. Bring the mixture to a boil over medium heat. Once boiling, reduce the heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  4. Remove from heat and let it sit, covered, for an additional 5 minutes.
  5. Fluff the rice with a fork, then stir in the chopped cilantro and lime juice before serving.
