Ingredients:

  • 200g rice noodles
  • 1 cup edamame beans, shelled
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 tablespoons peanut butter
  • 1/4 cup Thai sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • 1 teaspoon fresh ginger, grated
  • Salt and pepper to taste
  • Chopped cilantro for garnish
  • Chopped peanuts for garnish

Instructions:

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  3. Add the sliced bell peppers and edamame beans to the skillet, cooking for 5-7 minutes until the peppers are tender but still crisp.
  4. In a bowl, whisk together peanut butter, Thai sauce, soy sauce, and lime juice until smooth.
  5. Add the cooked rice noodles to the skillet, followed by the peanut sauce. Toss everything together until well combined and heated through.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped cilantro and peanuts.
