Ingredients:

  • 1 cup mixed dried fruits (raisins, currants, chopped dried apricots)
  • 1/2 cup chopped candied peel
  • 1/2 cup dark brown sugar
  • 1/2 cup breadcrumbs
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon mixed spice (cinnamon, nutmeg, allspice)
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • Zest of 1 orange
  • Zest of 1 lemon
  • 1/4 cup orange juice
  • 1/4 cup brandy (optional)

Instructions:

  1. In a large mixing bowl, combine the mixed dried fruits, candied peel, and dark brown sugar. Set aside for about 30 minutes to allow the fruits to soak up the sugar.
  2. In another bowl, mix the breadcrumbs, flour, baking powder, mixed spice, and salt.
  3. Add the soaked fruit mixture to the dry ingredients, then stir in the eggs, milk, melted butter, orange zest, lemon zest, orange juice, and brandy (if using). Mix until well combined.
  4. Grease a pudding basin and pour the batter into it, smoothing the top.
  5. Cover the basin with parchment paper and secure it with string. Place the basin in a large pot with a steamer insert or a trivet, then fill the pot with water to halfway up the sides of the basin.
  6. Cover the pot and steam for about 2 to 2.5 hours, ensuring the water does not evaporate completely.
  7. Once cooked, remove the pudding from the pot and allow it to cool slightly. Turn it out onto a serving plate.
  8. For serving, warm the pudding gently, then drizzle with brandy and ignite for a festive touch. Serve with brandy butter or cream.
