Ingredients:

  • 1 lb chicken breast, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 wooden skewers, soaked in water for 30 minutes
  • 1 cup Greek yogurt
  • 1 small cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • Salt to taste

Instructions:

  1. In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add the chicken cubes and marinate for at least 30 minutes.
  2. While the chicken is marinating, prepare the tzatziki sauce. In a separate bowl, mix the Greek yogurt, grated cucumber, minced garlic, dill, and salt. Refrigerate until ready to serve.
  3. Preheat the grill to medium-high heat. Thread the marinated chicken onto the soaked skewers.
  4. Grill the chicken skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  5. Serve the chicken souvlaki hot with the tzatziki sauce on the side.
