Ingredients:

  • 1 lb chicken breast, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 wooden skewers, soaked in water for 30 minutes
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • Salt to taste

Instructions:

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper to create the marinade.
  2. Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour.
  3. While the chicken marinates, prepare the tzatziki sauce. In a separate bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, and salt. Mix well and refrigerate until ready to serve.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated chicken onto the soaked skewers.
  6. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  7. Serve the chicken souvlaki hot with the tzatziki sauce on the side.
