Ingredients:

  • 4 cups vegetable broth
  • 1 cup bean sprouts
  • 1/2 cup sliced mushrooms
  • 1/4 cup soy sauce
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon white pepper
  • 1/2 cup diced tofu
  • 2 green onions, chopped

Instructions:

  1. In a large pot, bring the vegetable broth to a boil over medium-high heat.
  2. Add the sliced mushrooms and cook for about 5 minutes until they are tender.
  3. Stir in the soy sauce, ground black pepper, and white pepper.
  4. In a small bowl, mix the cornstarch with water until smooth. Slowly add this mixture to the soup while stirring continuously to thicken.
  5. Add the diced tofu and bean sprouts, and simmer for another 2-3 minutes.
  6. Remove from heat and garnish with chopped green onions before serving.
