Ingredients:

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar, plus more for dusting
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup finely chopped pecans or walnuts
  • 1/4 teaspoon salt

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and 1/2 cup of powdered sugar until light and fluffy.
  3. Add the vanilla extract and mix until well combined.
  4. In another bowl, whisk together the flour and salt. Gradually add this to the butter mixture, mixing until just combined.
  5. Fold in the finely chopped nuts until evenly distributed.
  6. Shape the dough into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for 15-20 minutes, or until the bottoms are lightly golden.
  8. Remove from the oven and let cool slightly before rolling in additional powdered sugar.
  9. Allow to cool completely on a wire rack before serving.
