Ingredients:

  • 4 cups dashi broth (made from kombu and bonito flakes)
  • 3 tablespoons miso paste (white or red, depending on preference)
  • 1 cup firm tofu, cubed
  • 1/2 cup wakame seaweed, rehydrated and chopped
  • 2 green onions, thinly sliced
  • 1 tablespoon soy sauce (optional, for added flavor)
  • Salt, to taste

Instructions:

  1. In a pot, bring the dashi broth to a gentle simmer over medium heat.
  2. In a small bowl, mix the miso paste with a ladle of hot dashi until smooth, then return it to the pot.
  3. Add the cubed tofu and chopped wakame to the pot, and simmer for an additional 2-3 minutes until heated through.
  4. Taste the soup and adjust the seasoning with soy sauce or salt as needed.
  5. Serve hot, garnished with sliced green onions.
