Ingredients:

  • 4 oz dark chocolate (70% cocoa), chopped
  • 4 oz milk chocolate, chopped
  • 4 oz white chocolate, chopped
  • 1 cup heavy cream, divided
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp instant espresso powder
  • 1/4 tsp sea salt
  • 2 tbsp cocoa powder for dusting (optional)
  • Chocolate shavings for garnish (optional)

Instructions:

  1. Melt the dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and let cool slightly.
  2. In another bowl, melt the milk chocolate using the same method. Once melted, set aside to cool.
  3. Melt the white chocolate in a separate bowl and let it cool as well.
  4. In a large mixing bowl, whip 1/2 cup of the heavy cream until soft peaks form. Divide the whipped cream into three bowls.
  5. To the first bowl, add the cooled dark chocolate and gently fold until combined.
  6. In the second bowl, mix in the milk chocolate and fold gently.
  7. In the third bowl, fold in the white chocolate.
  8. In another bowl, beat the egg whites until frothy, then gradually add the sugar while continuing to beat until stiff peaks form.
  9. Add the espresso powder and sea salt to the egg whites and mix gently.
  10. Divide the egg white mixture into three parts and fold into each chocolate mousse mixture, one at a time, ensuring not to deflate the egg whites.
  11. Spoon the dark chocolate mousse into serving glasses, followed by the milk chocolate, and then the white chocolate mousse on top.
  12. Chill the mousses in the refrigerator for at least 2 hours until set.
  13. Before serving, dust with cocoa powder and garnish with chocolate shavings if desired.
