Triple-Grilled Swiss Cheese, Bacon, and Chicken Sandwiches

Ingredients:

  • 8 slices butterbread
  • 8 slices Swiss cheese
  • 8 slices bacon
  • 2 chicken breasts
  • 4 tablespoons margarine

Instructions:

  1. Preheat a skillet or griddle over medium heat.
  2. Cook the bacon in the skillet until crispy. Remove and drain on paper towels.
  3. Season the chicken breasts with salt and pepper. In the same skillet, add a tablespoon of margarine and cook the chicken for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove from heat and let rest before slicing.
  4. Butter one side of each slice of butterbread with margarine.
  5. On the unbuttered side of four slices, layer 2 slices of Swiss cheese, a portion of sliced chicken, 2 slices of bacon, and another 2 slices of Swiss cheese. Top with the remaining slices of butterbread, buttered side up.
  6. Grill the sandwiches in the skillet over medium heat for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted. Repeat with the remaining sandwiches.
  7. Slice each sandwich in half and serve warm.
