Ingredients:

  • 4 boneless, skinless chicken thighs
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon black pepper
  • 1 cup basmati rice
  • 1/2 cup coconut milk
  • 1 cup water
  • 1/2 teaspoon salt
  • Chopped fresh cilantro for garnish
  • Pineapple wedges for grilling (optional)

Instructions:

  1. In a bowl, mix pineapple juice, soy sauce, brown sugar, apple cider vinegar, garlic, ginger, and black pepper to create the marinade.
  2. Add chicken thighs to the marinade and let them soak for at least 1 hour, preferably overnight in the refrigerator.
  3. In a saucepan, combine basmati rice, coconut milk, water, and salt. Bring to a boil, then reduce heat and simmer covered for 15 minutes, or until the rice is tender and the liquid is absorbed.
  4. Preheat your grill to medium-high heat. Remove chicken from the marinade and grill for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Optionally, grill pineapple wedges for a few minutes until caramelized.
  5. Fluff the coconut rice with a fork and serve it alongside the grilled chicken. Garnish with chopped cilantro and serve grilled pineapple on the side if desired.
