Ingredients:

  • 1 can pineapple slices in juice, drained
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup shredded coconut
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a 9-inch round cake pan, melt the butter in the oven. Once melted, sprinkle the brown sugar evenly over the butter.
  3. Arrange the drained pineapple slices over the brown sugar mixture. You can place a maraschino cherry in the center of each pineapple ring for added color and flavor.
