Truffle Chicken with Mushroom Rice

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 cup mushrooms, sliced (cremini or button)
  • 1/4 cup truffle sauce
  • 1/2 cup white wine
  • 1 cup rice (preferably arborio or jasmine)
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Rinse the rice under cold water until the water runs clear. In a saucepan, bring the chicken broth to a boil. Add the rice, reduce heat to low, cover, and simmer for 15-20 minutes until cooked. Fluff with a fork and set aside.
  2. While the rice is cooking, season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sliced mushrooms. Sauté until the mushrooms are tender and browned, about 5 minutes.
  4. Pour in the white wine, scraping any brown bits from the bottom of the skillet. Allow it to simmer for 2-3 minutes until slightly reduced.
  5. Stir in the truffle sauce, mixing well. Return the chicken to the skillet, coating it in the sauce. Cook for an additional 2 minutes to heat through.
  6. Serve the chicken on a bed of the cooked rice, drizzled with the mushroom and truffle sauce. Garnish with fresh parsley.
