Ingredients:

  • 1 large baking potato
  • 1 can of tuna in water, drained
  • 2 tablespoons mayonnaise
  • 1 tablespoon Greek yogurt
  • 1 tablespoon lemon juice
  • 2 spring onions, finely chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Wash the baking potato thoroughly and prick it several times with a fork. Bake it in the preheated oven for about 45-60 minutes, or until the skin is crispy and the inside is soft.
  3. While the potato is baking, prepare the tuna filling. In a mixing bowl, combine the drained tuna, mayonnaise, Greek yogurt, lemon juice, and chopped spring onions. Mix well until combined. Season with salt and pepper to taste.
  4. Once the potato is done, remove it from the oven and let it cool for a few minutes. Cut it open lengthwise and fluff the inside with a fork.
  5. Spoon the tuna mixture generously into the opened potato.
  6. Garnish with fresh parsley if desired, and serve immediately.
