Ingredients:

  • 200g plain flour
  • 100g unsalted butter, softened
  • 150g caster sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • Zest of 1 lemon
  • Zest of 1 orange
  • Juice of 1 lemon
  • Juice of 1 orange
  • 100g icing sugar

Instructions:

  1. Preheat your oven to 180°C (350°F) and grease a 20cm round cake tin.
  2. In a mixing bowl, cream together the softened butter and caster sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and citrus zests.
  4. In another bowl, sift together the plain flour and baking powder.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Pour the batter into the prepared cake tin and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the cake is baking, prepare the citrus glaze by mixing the lemon and orange juice with the icing sugar until smooth.
  8. Once the cake has cooled, drizzle the citrus glaze over the top and let it set before serving.
