Ingredients:

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup whole milk
  • 3 large eggs
  • 2 ½ teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 cup heavy cream
  • ¼ cup powdered sugar
  • 1 cup fresh raspberries
  • 1 tablespoon lemon juice

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In another bowl, combine flour, baking powder, and salt. Gradually add to the butter mixture, alternating with milk, beginning and ending with flour. Mix until just combined.
  5. Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. While the cakes are cooling, prepare the raspberry swirl. In a small saucepan, combine fresh raspberries and lemon juice. Cook over medium heat until the raspberries break down and form a sauce, about 5-7 minutes. Strain to remove seeds and let cool.
  7. Whip the heavy cream and powdered sugar together until soft peaks form.
  8. Once the cakes are completely cool, place one layer on a serving plate. Spread half of the whipped cream on top and drizzle with half of the raspberry sauce. Top with the second cake layer.
  9. Spread the remaining whipped cream over the top and sides of the cake. Drizzle with the remaining raspberry sauce. Optionally, garnish with fresh raspberries.
  10. Chill for at least 30 minutes before serving to allow the flavors to meld.
